John McDougall er en af de kendte og mest vidende folk fra whiskyindustrien, med over 40 års erfaring fra sit arbejde som daglig leder på over 20 destillerier - bl.a. på Laphroaig, Springbank og The Balvenie. John fungerer i dag som (Skotlands mindste) uafhængige aftapper, som rådgiver for whiskybranchen, foredragsholder og forfatter. Qualityworld importerer alle Johns serier til Danmark.
Der aftappes der altid uden farve og koldfiltrering, og på nær Whisky Live Series, der aftappes i 50cl flasker ved 50%, aftappes der næsten altid ved fadstyrke.
John aftapper kun topkvalitet -- overvejende first og second fill fade, der tidligere har indeholdt amerikansk Bourbon whisky, og hans whiskyer er oftest meget fyldige med sødme, vanille, honning, frugt, lyng, blomster og urter. Whisky Life Series kommer kun i 156 flasker pr. aftapning (og heraf kommer kun 24 til Danmark) - hver flaske er håndnummereret og underskrevet af John.
Født i 1941 og med over 40 års erfaring fra branchen (50 år hvis man inkluderer de unge år i ’marken’) er John McDougall en af dinosaurerne indenfor whiskyindustrien.
Han startede som barn med at hjælpe sin far i marken, og fik allerede i disse år en solid viden om byg (barley) og kravene fra malterierne, som hans far solgte og leverede til.
I 1963 blev han ansat som Trainee Manager på Aultmore Distillery og var de næste par år på Knockdu, Balmenach, Imperial, Banff og Teaninich.
I 1965 blev han Assistant Manager på Dailuaine og i 1968 Manager på Balvenie.
Fra 1970-1974 var han manager på Laphroaig, hvor han havde ansvar for at modernisere og optimere driften og produktionen og skulle øge kapaciteten bl.a. ved installation af større kedler.
Fra 1974 Manager på Tormore og fra 1977 Quality Assurance Manager for Long John International, i 1979 General Manager of Malt Distilleries for Laphroaig, Tormore, Ben Nevis, Glenugie og Kinclaith.
1981 General Manager of Warehousing, Blending and Bottling for Long John Int.
1986-1996 Manager på Springbank
Siden 1996 Selvstændig ‘Whiskykonsulent’, forfatter (Wort, Worms and Washbacks) og involveret i Kilchoman, Blackwood, Islay Whisky Society, Scandinavian Malt Whisky Society, cask broker, destillerier i østen og meget meget mere.
Har gennem sin tid været involveret i mere end 20 single malt destillerier, 2 grain destillerier (Girvan og Stratchclyde) og ét Gin destilleri (Plymouth).

What makes you get out of bed in the morning?

Life and what I do. There is no reason to stay in bed.

Does a persons taste in whisky reveal a side of ones personality?

I think that different countries have different taste. I don’t think you can tell the personality of a single person by knowing which whisky the person prefers.

What has been the most difficult decision you had to make in your career in the whisky industry ?

That I had to stop at Long John International — there was different reasons why I had to stop, some of them personal. But I had a good time at Long John International.   

What has been your best experience over the 40 years in the industry?

What I am doing know! I love to be a whisky consultant —  travel and keep my contact with the different distilleries. I meet lots and lots of different people and every day is a new day. Not many people has held a talk and taste in an igloo in Lapland — I have. It was cold but I enjoyed it. I see my self as a bit of missionary, I preach about whisky. And the day I don’t like preaching, that is the day I don’t get out of bed :-) My best experience in the past was when I was appointed as manager of Laphroig. I was only 28 years old! That was amazing.

What kind changes does the manager of a distillery give to the distilleries brand of whisky?

That’s a good question! I think that in my time as a manager of Laphroig we made a lot of changes. We didn’t change the traditions but we added to the tradition at Laphroig. But I think times as changed, and you cannot do the same today. Managing  a distillery is very different today. In my days the team lived nearby or at the distillery. Today a team work three to four weeks at the distillery and then moves on. You don’t take the same time to develop and make changes. I don’t say it is bad – but different.

What do you see in the future of the industry?

That’s a bit difficult to say. I see a lot of potential. There is a lot of exciting new ideas on the market. An hopefully the market in China and other countries will open even more and give us some opportunities to make new whiskies and try a new market.

 

If you meet a person who doesn’t like whisky, how would you convince that person to try whisky and be openminded about it.

You know me Mikael —every person is entitled to his or her own opinion! But I would definitely not serve a smoky islay whisky. I would begin with something light and perhaps sweet. But people have their own taste and differences—I don’t like artichokes, you can’t make me like them but you can ask “Have you tried it?”. That’s what I ment when I said “I preach”.
